Carrots grown in Polignano range in colour from pale yellow to deep orange to dark purple. They are a unique vegetable – its colours, taste and nutritional characteristics
makes it stand out from other carrots. It is unique to Polignano. Every year, we select the best plants, plant them out in small, separate plots and choose the seeds of the healthiest plants. These are then replanted between August and September. Apart from their distinctive colours, these carrots also have an extraordinary flavour. Our exquisite carrot conserve follows the traditions of Puglia - delicious at breakfast, as an accompaniment to pecorino or parmesan cheese or with any cured meat.

INGREDIENTS: Polignano speciality carrots, sugar and lemon

Once the carrots have been hand-harvested from our land, they are washed and cleaned thoroughly. They are then chopped and placed in a pan of water, with sugar, lemon juice and lemon rind and boiled until the carrots have softened. The water is
then drained and the carrots are left to cool. Once cooled, they are blended. The mixture is then heated until it has thickened. When the required consistency is achieved, the mixture is cooled and transferred in to jars. Our unique carrot jam is an excellent accompaniment to hard cheese, on toast, in tarts and with cold meat and salami.
