Caramelised Onion (Cipolla Caramellata)
Onions are one of the staples of the Mediterranean especially in Puglia – we have a yearly festival celebrating the Red Onion of Acquaviva! There are a host of native Italian varieties that are essential ingredients in the most well-known dishes and our caramelised pot of delicious onions use the distinctive Acquaviva onion. Our soft, caramelised onion jam is an incredible match for salumi and goes especially well in the company of cheese, roasted meats and on toasted bread for a crostini antipasto.

Carbon footprint: 0 km The Acquaviva red onion is grown locally and its characteristics (deep colour, shape and full of mineral salts and vitamins) have been renowned since the 19th century. Raw or cooked, they produce unmistakable fragrances and flavours. The onions’ colour is somewhere between carmine red and violet, gradually lightening towards the middle until it becomes completely white. Process: Once the onions have been hand-harvested, they are washed and cleaned thoroughly. Their outer skins are removed and they are sliced then placed in a pan with all the ingredients: sugar, red wine, vinegar and cooked until they arrive at the right consistency and colour. Then the mixture is cooled and transferred in to jars. Our delicious caramelised onion jam is an excellent accompaniment to all cheese, sliced meats and on toast as a crostini. It can be used as an accompaniment to a simple grilled fish!
