Pinot Nero Sparkling (Brut)
Everything you love in a sparkling wine can be found in our Pinot Nero Terre Brut. We follow the same process of production as used with Champagne, the ‘metodo classico’. The result is an extremely elegant, aromatic and perfectly balanced sparkling wine.

The Pinot Noir grapes are harvested by hand around the first ten days of August. They undergo a soft pressing where only the must (the juice of the grape) is extracted. Selected yeasts are added then in steel barrels, at a controlled temperature of 18 ° C the fermentation process begins. The bottling (tirage) takes place the following spring and is stored for a minimum of 25 months. This is where the wine undergoes its second fermentation and becomes effervescent. This is known as the ‘metodo classico". After the disgorgement (or dégorgement), the wine is then placed in the cellar for at least four more months.
Organoleptic description: Our sparkling Terre Brut has an Intense straw colour, with shimmering, golden reflections. Its perlage is persistent, abundant and fine. It is extremely elegant and aromatic and perfectly balanced by a good acidity – full of the characteristics we know and love in a Champagne.
Serving temperature: 6-7 °C
Food pairings: This sparkling Terre Brut is excellent as an aperitif or with any meal.
