Cabernet Sauvignon

Puglia IGT is a region-wide appellation in southern Italy. Since its introduction in November 1995, it has become one of the most widely used of Italy's 120 or so IGTs (Indicazione Geografica Tipica), and is one of the country's most significant wine appellations. Puglia (IGT) is now contributing in the fine wine category.
Cabernet Sauvignon is probably the most famous red wine grape variety in the world. It is rivalled in this regard only by Merlot. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world.
Puglia can count on a wide variety of terroir that is expressed in a rich bouquet of aromas and flavours without equal and the land of Terre Di San Vito - a sun-soaked area whose Mediterranean climate is an ideal environment for cultivating the Cabernet Sauvignon grape. Puglia (IGT) is the second-largest producer of wine grapes in the country (behind Veneto). We are blessed with warm to hot sunny days and cooler nights. The heat of the day promotes sugar development and allows the Cabernet Sauvignon (Vitis vinifera) grapes to ripen, while the lower night time temperatures keep the grapes’ acids from dissipating completely. The balance between sugar and acid is what makes the Cabernet Sauvignon grape ripe for winemaking!
Cabernet Sauvignon (Vitis vinifera) is one of the most cold-hardy and disease-resistant varieties. It is highly vigorous, especially on a rootstock, and as its vines are highly adaptable to different soil types and climates – they are relatively easy to grow. The grapes mature slowly and so harvest late in the season, this offers us a wider choice of harvest dates. They produce a dense leaf canopy and relatively high grape yields. They have a thick skin with dark purple-black fruits which turn from a green to purple and produce a rich red juice.
Used frequently for its ability to blend well, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec.
Our Cabernet It is a full-bodied, acidic wine which is high in alcohol and packed with strong tannins that mellow with age. Because their grapes have a powerful presence in blends, and with thanks to the passion and experience of our wine makers, we have created an incredible flavour profile by blending our Cabernet Sauvignon with our Malbec grapes. This blend has resulted in our delicious ‘Il Vescovo’ an award winning wine (Bellavita, London 2015).
